Strawberry Balsamic Avocado Toast

  • Toast the ciabatta bread until lightly crisped and golden-brown.
  • Slice the avocado in half, remove the pit, and scoop avocado flesh onto the toasted bread. Spread evenly with a knife to create a flat surface for laying the strawberries down.
  • Cut the tops off the strawberries and slice them lengthwise. Top each avocado toast with sliced strawberries.
  • Drizzle about 1 tsp of balsamic vinegar over each piece of toast, then serve.

Notes

Quality of ingredients: High quality ingredients make a huge difference in cooking, especially when it comes to produce! Avocado toast is best when the avocado is perfectly ripe. You can test this by gently squeezing the largest part of the avocado - if it gives a little, it should be ripe. Strawberries are a little more forgiving. If they're slightly underripe, they'll taste more sour and contrast the balsamic vinegar nicely. If they're ripe or slightly overripe, they'll taste sweeter and your breakfast might feel a little more like dessert :)
Balsamic vinegar: There are plenty of fun flavors of balsamic vinegar to choose from, but vanilla bean is our favorite (so far)! If you don't have vanilla bean balsamic or want to try something different, we recommend sticking to a sweeter flavor profile for this dish.
