Pineapple Mezcal Old Fashioned

This citrusy yet smokey pineapple mezcal old fashioned is a perfectly balanced cocktail for the transition between summer and fall.

Equipment

Ingredients

  • 1 large ice cube or sphere
  • 1.5 fluid ounce mezcal espadin
  • ¾ fluid ounce pineapple juice
  • ¼ fluid ounce lime juice
  • 1 dash orange bitters
  • 1 dash simple syrup
  • 1 wedge pineapple optional garnish

Instructions

  • Add all ingredients to a small rocks glass.
  • Stir to mix well and chill, and serve, optionally garnished with a pineapple wedge.

Notes

Espadin mezcal: Like tequila or rum, there are a few varieties of mezcal that have very different flavor profiles. Espadin is the most common type of mezcal and has similar notes to tequila, making it more approachable if you've never tried mezcal before. That's why we love to use it in smoky, citrusy cocktails like this one!
Simple syrup: You can use store-bought simple syrup, but it’s really easy to make at home if you want more control over the amount of sugar in your drink. Learn how to make it here.
Measuring a dash: A dash of liquid generally ranges from ⅙ of an ounce to ⅛ of an ounce (one bar spoon full). We suggest experimenting with the amounts to see what suits your tastes best, since cocktails aren't an exact science!
