Easy White Chocolate Peppermint Fudge

  • 7 ounces sweetened condensed milk
  • 12 ounces white chocolate chips
  • ½ teaspoon peppermint extract
  • ¼ cup crushed candy canes

Instructions

  • Lightly grease an 8-inch brownie pan with cooking spray and line with parchment paper (the cooking spray helps the parchment stay in place).
  • In a medium saucepan, warm the condensed milk over medium heat for 1 to 2 minutes. Then add the white chocolate chips and begin stirring, scraping the bottom and sides of the saucepan as the chocolate melts. Stir vigorously and continuously until the white chocolate chips have melted and are fully incorporated, about 2 minutes.
  • Remove the pan from heat and stir in the peppermint extract until fully incorporated. The fudge should have a smooth, creamy consistency at this point.
  • Pour the fudge into the prepared pan. Use a rubber spatula to help spread it into an even layer, or let it settle by itself for a more organic shape. Then sprinkle the crushed candy canes evenly over the top of the fudge.
  • Set fudge in the refrigerator for at least 2 hours before slicing.

Notes

Essential tools: A rubber spatula is super helpful when making fudge! You’ll use it to scrape, stir, and smooth the fudge at different stages in this recipe. (It’ll even help you get all the condensed milk out of the can).
Stirring the fudge: Once you add the white chocolate chips, start stirring and don’t stop until it’s all melted and the fudge is a smooth and creamy consistency. Otherwise your chocolate may burn, and you’ll end up with more of a lumpy texture.
Candy cane topping: The candy cane topping adds a crunchy texture and festive look to this fudge, but you can totally skip this if you want an easy 3-ingredient fudge. It will store for about 1 week longer this way and will be easier to package for Christmas gifts (see notes below).
Serving suggestions: This easy peppermint fudge is the perfect dessert for Christmas parties. It also makes a great gift for friends, neighbors, and coworkers. Slice it into squares using a large chef's knife and package small servings in cellophane gift bags!
Storing fudge: The fudge will last in an airtight container in the fridge for up to 1 week. If you choose not to top the fudge with crushed candy canes (see note above on candy cane topping), it will last 2 weeks.
