Bacon Cheese Loaded Tater Tots

These bacon cheese loaded tater tots are the ultimate indulgent late night snack - super gooey and savory, and super easy to make with only 4 ingredients.

  • 2 cups frozen tater tots
  • 4 pieces bacon
  • 3 ounces Velveeta
  • 2 scallions sliced

Instructions

  • Bake or air fry frozen tater tots according to package directions.
  • In the meantime, preheat oven to 375 degrees F and prepare the bacon. Chop uncooked bacon into pieces and fry over medium-high heat until crispy, then drain excess grease on paper towels. If you have leftover cooked bacon, simply chop into small pieces and set aside.
  • Slice the Velveeta into approximately half-inch cubes.
  • Transfer the cooked tater tots to an oven-safe baking dish. Evenly distribute the Velveeta cubes over the tots, then top with bacon bits.
  • Bake until the cheese is melted and gooey, about 10 minutes.
  • Top with sliced scallions and serve immediately.

Notes

Frozen tater tots: We recommend cooking your tots in the air fryer if you have one, since they get extra crispy this way. Air fry them at 400 degrees F for 8 to 10 minutes, shaking them halfway through.
Bacon: This recipe becomes even easier if you already have cooked bacon in the fridge! Simply chop it up and use it as a topping on the tots before baking. If you don't have cooked bacon, you can chop it and fry the bacon bits while the tater tots are cooking.
Variations: The beauty of loaded tater tots is how customizable they are! If you want this to be a super easy late night snack, use whatever cheese and toppings you have laying around in the fridge. Shredded cheese won't be quite as gooey as Velveeta, but it's still delicious on tater tots. Sub bacon for leftover taco beef, sausage, or chorizo for a fun twist. And you can try fresh toppings like guacamole or pico de gallo instead of scallions!
