- 4 large strawberries
- 1 medium lime juiced
- 6 mint leaves
- 4 fluid ounces white rum
- 1 fluid ounces simple syrup
- 1 small jalapeno sliced into wheels
- club soda
- 2 mint sprigs for garnish
Remove and discard the tops of the strawberries, then slice the strawberries in half. Add them to the bottom half of the shaker with the lime juice and muddle until you've formed a nice pulp.
Add the mint leaves, white rum, simple syrup, and jalapeno slices to the shaker. Shake to combine, without ice - you want to agitate the ingredients without bruising the mint leaves.
Now, add a few large ice cubes to the shaker, then shake briefly until chilled.
Fill two Collins glasses with ice. Strain mojitos into each glass, then top off with club soda using the bar spoon trick (see notes section).
Garnish with a sprig of mint leaves and serve with a straw.
Bar spoon trick: To add the club soda to this cocktail, use a bar spoon to force the liquid down to the bottom of the glass. Place the bar spoon upside down in the glass (all the way to the bottom), then gently pour the club soda over the twisted handle so it funnels down into the drink. This balances out the carbonation throughout the drink, rather than letting all the bubbles sit at the top!
Serving: Mojitos are best enjoyed with a straw - these metal ones are our favorite for sipping on cocktails! Nestle the mint garnish right next to the straw so that the scent hits your nose just as you take a sip. This is actually where most mojitos get most of their minty flavor from!
