Cheesy Spinach and Artichoke Dip

Our cheesy spinach and artichoke dip is made with 6 main ingredients for delicious and easy restaurant style flavor in under 30 minutes. It's the perfect party appetizer or game day snack!

Ingredients

  • 4 oz light cream cheese
  • 1 cup reduced fat mozzarella cheese shredded
  • ½ cup grated parmesan cheese
  • 1 cup artichoke hearts chopped
  • tsp minced garlic
  • ½ tsp salt
  • ½ tsp black pepper
  • 3.5 oz baby spinach

Instructions

  • Add cream cheese, mozzarella cheese, grated parmesan, artichoke hearts, garlic, salt, and pepper to a medium saucepan. Cook over medium-low heat until cheese is slightly melted, stirring occasionally, about 6 to 8 minutes.
  • Add baby spinach to the saucepan (in batches, if needed) and cover. Cook until spinach is wilted, about 3 to 5 minutes, then stir to combine. Continue adding spinach in batches, covering to cook and then stirring to incorporate.
  • Once all the spinach has been incorporated, stir well and serve hot with pita chips, bread, crostini, or fresh veggies for dipping. Enjoy!

Notes

Artichoke hearts: We recommend buying canned quartered artichoke hearts for this recipe - simply drain and then chop them into smaller pieces before measuring. You probably won't use the entire can unless you increase the serving size, but you can always use the leftovers to make our Spinach & Artichoke Pizza (get the recipe here)!
Fresh spinach: If you have larger spinach leaves, tear them into smaller pieces before adding to the saucepan. They'll incorporate better and it'll be much easier to eat the dip.
Serving size & suggestions: This recipe makes 4 half-cup servings, but note that this may vary. If you're wondering what to dip, we love serving spinach and artichoke dip with Stacy's pita chips. But it also goes great with crostini, fresh bread, tortilla chips, pretzels, or veggies like carrots and celery.
Prep ahead and reheat instructions: If you're making this for a party, it's easy to prep ahead of time and reheat! Simply transfer the dip to a small oven-safe dish and bake at 350 degrees until warmed through, stirring occasionally. If you're reheating from room temp, it will only take about 15 to 20 minutes. But if you need to prepare this dip well in advance, refrigerate until ready to reheat and then bake for about 30 to 40 minutes before serving!
Slow cooker method: Alternatively, you can prepare this dip in a slow cooker or crockpot. This works especially well if you're making a larger batch and have a few extra hours to prepare. Simply combine all the ingredients in a slow cooker, cover, and cook on HIGH for about 2 to 3 hours, stirring every 30 minutes or so to help things combine.
