Wondering what to do with overripe avocado? Try making this easy recipe for moist and flavorful avocado muffins with cinnamon! They’re perfect for breakfast or an afternoon snack and whip up in just 30 minutes with pantry staples.
Preheat oven to 325 degrees F and lightly grease a muffin tin.
Empty the avocado flesh into a large mixing bowl. Mash with a fork until it's completely smooth.
Add the softened butter and granulated sugar to the avocado and cream together. Then add the egg, lime juice, and vanilla and stir well to combine. Set aside.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
Fold the dry ingredients into the wet ingredients until just combined. Avoid over-mixing as this will toughen the batter.
Spoon the batter into the muffin tin, filling each well about ¾ of the way. Note that the batter is thick and may seem dry, but the avocado will give the muffins plenty of moisture!
Lightly sprinkle the muffin tops with sugar before baking.
Bake for 18 to 20 minutes, or until an inserted toothpick comes out clean. Let the muffins cool for at least 5 minutes before removing them from the pan.
Serve warm or store in an air-tight container for up to 5 days.
Notes
Avocado: One medium avocado equals about a half cup when mashed. We recommend measuring it out before adding it to the recipe, but it's okay if you're slightly over or under!Serving and storing: These muffins taste best when served fresh out of the oven and still slightly warm. They're moist and fluffy on the inside, while slightly crunchy on the outside. They store well in an air-tight container, but note that they will moisten over time and the muffin tops will lose a bit of their crunchiness.Disclaimer: It's okay to eat overripe avocados, but avoid using them if they smell off or seem rotten!
