Ingredients
1poundribeye, top round, or flank steakfrozen and sliced thin
Using a sharp chef’s knife, slice the steak as thin as you possibly can.The thinner it is, the better it’ll taste. This step takes some patience and time, but is well worth it. Thinly sliced steak is what makes cheesesteaks so special.
Cook the steak over high heat in a little bit of cooking oil until fully browned. A pre-heated cast iron or stainless steel pan works best for this as it’ll give the steak a little char, and help any liquid that escapes evaporate quicker. Once the steak is done cooking, about 4 to 6 minutes, drain any excess liquid if needed.
Heat the heavy cream in a small saucepan until steaming over medium-low heat. Add in the American cheese and stir until it’s fully melted. The cheese sauce should be smooth and creamy, and thick enough to cling to a spoon or rubber spatula while falling off in ribbons. Salt to taste.
Add the cooked steak to the bottom half of the slider rolls and pour the cheese sauce evenly over it.
Close the sliders and serve hot.
Notes
Let the steak sit for a little - Cutting frozen steak straight from the freezer is hard but doable (especially with a sharp Chinese chef’s knife). But it becomes much easier if you let it sit out for 30 to 60 minutes before you slice it. Using steak you just bought - If you are looking to make these cheesesteak sliders at the last minute, you can stick the steak in the freezer for 30 to 60 minutes to help it firm up before slicing. Don’t let the cheese sit - If you don’t plan to make the steak and cheese at the same time, cook the steak first and keep it warm on the stove while you make the cheese sauce so you can assemble and serve the sliders right away. This’ll make sure the cheese is as rich and creamy as possible.Or make ahead and reheat to serve - These sliders reheat super well. Just put them in a baking dish, cover with foil, and bake at 350 degrees F for 20 to 25 minutes until warmed through.
