Ingredients
1poundpizza dough ball
3tablespoonextra virgin olive oilsplit, plus extra for finishing
1tablespoonminced garlicsplit
14ouncesquartered artichoke heartsroughly chopped
5ouncesbaby spinach
1cupmozzarella cheeseshredded
⅓cupgrated parmesan cheeseplus extra for finishing
Preheat the oven to 525 degrees F, unless your dough recipe calls for a different baking temperature.
Heat the garlic and olive oil in a frying pan over medium heat until fragrant.
Add the chopped artichokes to the pan and season with salt and pepper. Sauté until they’re slightly softened, about 3 to 5 minutes.
Add the spinach to the pan, working in batches if needed. Sauté until the spinach is wilted, about 2 to 3 minutes, then adjust salt and pepper to taste and remove from heat.
In a small bowl, combine the mozzarella and parmesan and toss to combine.
Stretch the dough out on a floured pizza pan, then top with a thin layer of extra virgin olive oil (about 1 to 2 tablespoons) and some minced garlic (½ tablespoon). Add the cheese, then top with the sautéed spinach and artichokes.
Bake the pizza at 525 degrees F until the crust is golden and crispy and the cheese is bubbly, about 10 to 12 minutes. Then, drizzle the pizza with olive oil, then top with extra grated parmesan and a pinch of sea salt before slicing and serving.
Notes
Don’t overcook the veggies - You want to cook the artichokes until they’re just soft and cook the spinach until it’s just wilted. They’ll continue to cook as the pizza bakes!Baking pizza at home - Oven temperature and bake time are highly dependent on the exact type of dough you’re using. For our homemade dough, we bake at 525F for about 10 to 12 minutes. Follow the baking guidelines for whatever dough you choose, whether it’s homemade or store-bought, for the best results.
