Cast Iron Skillet Nachos

These easy cast iron skillet nachos come together in under 15 minutes for a cheesy and delicious vegetarian-friendly snack.

Ingredients

  • 2.5 oz restaurant-style corn tortilla chips
  • cup shredded Mexican-blend cheese
  • 6 tbsp canned black beans drained and rinsed
  • 1 small jalapeno diced
  • 1 small roma tomato diced
  • ¼ small white onion diced

Instructions

  • Preheat oven to 350 degrees.
  • Place a single layer of tortilla chips (about half of them) in the bottom of a cast iron skillet. Top with 1/3 cup of the shredded cheese and about 2 tbsp black beans.
  • Add the remaining tortilla chips, then top with the remaining cheese and black beans. Finally, top with the jalapeno, tomato, and onion.
  • Bake for 10 minutes, or until cheese is melted and gooey. Serve immediately.

Notes

Serving suggestions: These nachos are perfect for late-night snacking, game days, or parties! You can serve them right in the cast iron skillet, but note that it'll stay hot for awhile so be careful not to touch it.
