This easy chicken and waffles recipe is ready in 30 minutes or less! Try it for Sunday brunch for two, or easily scale the recipe to serve a larger crowd.
Chop up the bacon into bits, then fry in a cast iron pan over medium-high heat until crispy, about 7 to 10 minutes. Use a slotted spatula to take it out of the pan and put it on a paper towel lined plate to drain.
Combine the flour, garlic powder, onion powder, ground cayenne, salt, and pepper in a shallow dish. Beat the egg in a separate shallow dish, then add the breadcrumbs to a third shallow dish.Dredge the chicken by first coating it completely in flour, then egg, then breadcrumbs. Let any excess egg drip off the chicken before transferring it to the breadcrumbs.
Add some vegetable oil to the pan with the bacon grease, so that you have about a quarter inch of fat in the pan. Heat over medium-high until shimmering.Fry the chicken in the oil until it's golden brown and crispy on both sides, about 2 to 3 minutes per side.
In the meantime, prepare the waffles if making from boxed mix.
Butter the waffles, then top with fried chicken, bacon bits, and maple syrup. Serve hot.

Waffles: Mini waffles are so much more fun than regular waffles! We love making them with Krusteaz mix and our DASH mini waffle maker, but you can also use frozen waffles if you prefer. Maple syrup: Make sure to use pure maple syrup for the best flavor! Sugary syrups like Pearl Milling Company or Log Cabin don’t actually have any maple in them. For extra flavor, you can use syrups like bourbon barrel aged maple syrup (our personal favorite), rum barrel aged maple syrup, or even crazier flavors like cinnamon or vanilla maple syrup. Serving suggestions: If you're making this as part of a larger brunch spread, chicken and waffles goes great with fresh fruit, eggs, and breakfast potatoes.Scaling: You can easily scale this to feed more people, but note that you'll have to cook the chicken and waffles in batches which will add time. So plan ahead!
