We love weekend brunch, but a lot of times we don’t actually feel like leaving home for it… So we end up making weekend brunch for ourselves! This easy chicken and waffles recipe is a favorite when we’re craving something hearty and comforting. And it also makes a wonderful breakfast for dinner!

I love recipes that combine sweet and savory, and chicken and waffles is a classic example of that. I personally enjoy this recipe most as a dinner, but it makes a fantastic brunch too.

Key Ingredients

  • Mini waffles – We like to use our DASH mini waffle maker to make our own waffles with boxed batter (we love the Krusteaz brand), but you can also use frozen waffles for an easy shortcut.
  • Fried chicken – You’ll need chicken breast, flour, eggs, and breadcrumbs for a simple dredge, then you’ll fry the chicken in vegetable oil.
  • Seasonings – We like to add some garlic and onion powder, ground cayenne pepper, and salt and pepper to the flour for the dredge. This makes the chicken a lot more flavorful.
  • Maple syrup – Make sure to use pure maple syrup for the best flavor! Sugary syrups like Pearl Milling Company or Log Cabin don’t actually have any maple in them. 
  • Bacon bits – What goes better with chicken and waffles than some crispy bacon? We like to fry up bacon bits to add on top of our chicken and waffles for an extra savory crunch in every bite. Simply use a regular package of bacon, and chop it up before frying.

How To Make Chicken and Waffles

You’ll need a heavy bottomed skillet, like a cast iron frying pan, to crisp the bacon and fry the chicken. Make the waffles while everything else cooks, and that’s it!

  1. Fry the bacon – Chop up the bacon into bits, then fry over medium-high heat until crispy. Use a slotted spatula to take it out of the pan and put it on a paper towel lined plate to drain.
  2. Dredge and fry the chicken – Pound the chicken to about a quarter-inch thickness, then dredge it in flour, then egg, then breadcrumbs. Add some vegetable oil to the pan with the bacon grease and heat over medium-high heat. Once it’s hot, fry the chicken until golden brown on both sides, flipping halfway through.
  3. Make the waffles – Cook or heat up the waffles, then top them with butter.
  4. Assemble and serve – We like to plate 2 mini waffles with a piece of fried chicken, top with bacon bits, and then drizzle with maple syrup. Serve hot.

Expert Tips

  • Cook the bacon and chicken in the same pan – Use a heavy bottomed pan like a cast iron skillet to cook the bacon, and then you can leave the bacon grease in the pan and use it to fry the chicken. There won’t be enough grease so you’ll have to add some vegetable oil and wait for it to get up to temperature again.
  • Use boxed waffle mix – Waffles from scratch are great, but we’ve found that some boxed mixes are just as good when we want an easy breakfast. Our personal favorite is Krusteaz!
  • Try flavored maple syrup – For extra flavor, you can use syrups like bourbon barrel aged maple syrup (our personal favorite), rum barrel aged maple syrup, or even crazier flavors like cinnamon or vanilla maple syrup. Serving Suggestions and Scaling

Chicken and waffles is a pretty filling breakfast on its own so we don’t usually serve it with sides. But if you want to include it as part of a larger brunch spread, we would suggest serving it with fresh fruit, breakfast potatoes, and scrambled eggs or even an egg casserole

This small batch recipe is meant to serve 2 people, but it can easily be scaled for a larger crowd. Just note that you’ll have to cook the waffles and chicken in batches, which will extend the cooking time.

Ingredients
 
 

  • ½ pound bacon uncooked
  • 4 mini waffles from boxed mix or frozen
  • 1 tablespoon butter
  • 2 tablespoons maple syrup

Fried Chicken

  • ½ pound chicken breast sliced lengthwise into 2 patties and pounded to quarter-inch thickness
  • ¼ cup all-purpose flour
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ¼ teaspoon ground red cayenne pepper
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 large egg beaten well
  • cup plain breadcrumbs
  • Vegetable oil

Instructions
 

  • Chop up the bacon into bits, then fry in a cast iron pan over medium-high heat until crispy, about 7 to 10 minutes. Use a slotted spatula to take it out of the pan and put it on a paper towel lined plate to drain.
  • Combine the flour, garlic powder, onion powder, ground cayenne, salt, and pepper in a shallow dish. Beat the egg in a separate shallow dish, then add the breadcrumbs to a third shallow dish.
    Dredge the chicken by first coating it completely in flour, then egg, then breadcrumbs. Let any excess egg drip off the chicken before transferring it to the breadcrumbs.
  • Add some vegetable oil to the pan with the bacon grease, so that you have about a quarter inch of fat in the pan. Heat over medium-high until shimmering.
    Fry the chicken in the oil until it's golden brown and crispy on both sides, about 2 to 3 minutes per side.
  • In the meantime, prepare the waffles if making from boxed mix.
  • Butter the waffles, then top with fried chicken, bacon bits, and maple syrup. Serve hot.

Notes

Waffles: Mini waffles are so much more fun than regular waffles! We love making them with Krusteaz mix and our DASH mini waffle maker, but you can also use frozen waffles if you prefer.

    Chicken and waffles feels somehow super comforting but also super fancy and special. I love the combo of sweet and savory and this recipe does that perfectly.
