Recently we’ve been on a Caesar salad kick. It’s so easy to make that we’ve been turning it into all our favorite foods (including a delicious Caesar salad pizza)! Since the sun is finally shining here in Vermont we wanted to go on a picnic, and a chicken Caesar sandwich sounded just perfect for the occasion. 

This might be one of the most delicious sandwiches we’ve made in 5 minutes! Built with layers of grilled chicken, parmesan, lettuce, and creamy Caesar dressing on crusty ciabatta, it’s all the classic flavors and textures we love in a handheld version.

What This Recipe Entails

This is a cold sandwich, so you’ll want to have grilled chicken ready in your fridge. We recommend prepping it ahead of time or using leftovers. Once that’s taken care of, this sandwich takes just a few minutes to assemble.

  • Prep time: 5 minutes

Ingredients

  • Ciabatta roll – The best bread for a chicken Caesar sandwich! It’s soft and fluffy on the inside, yet crusty on the outside, so it mimics the texture of the croutons normally found in Caesar salad. Try looking for these in the bakery section of your local grocery store!
  • Grilled chicken – Prepare this ahead of time (or use leftovers) since you’ll want it cold on the sandwich. We like to use our zesty lemon marinade for a simple flavor profile that pairs well with Caesar dressing.
  • Caesar salad dressing – The key to a great Caesar salad is a great dressing, and the same is true for this sandwich. We recommend using a high quality brand like Marie’s (typically found in the produce section) versus a shelf-stable salad dressing for the best flavor.
  • Parmesan cheese – Use a block of parmesan for the freshest flavor and best texture! We like to use both shredded and sliced parmesan on our sandwiches; the shredded gets mixed in with the chicken, while the slices give an extra salty zing to each bite.
  • Lettuce – We love using green leaf lettuce because it’s a more classic “sandwich lettuce,” but you can also use Romaine for a more traditional Caesar salad crunch.

How To Make A Chicken Caesar Sandwich

  1. Prep work: Add the chicken, Caesar dressing, and shredded parmesan to a bowl and toss to combine. This will add extra moisture to the chicken and help integrate parmesan flavor into every bite. Slice additional parmesan (use a mandoline to get wide, thin slices) and set aside.
  2. Assembly: Spread additional Caesar dressing on both sides of the ciabatta roll. Then, add the dressed chicken to the roll and top with sliced parmesan and lettuce. Close and enjoy!

Don’t be shy with the amount of dressing you use on the roll! Ciabatta needs moisture, and the dressing is what gives this sandwich such great flavor – that’s why we recommend spreading it on both halves of the roll instead of just one.

Serving Suggestions

This is one of the best sandwiches for packing up and taking to a park or the beach! Simply wrap it in parchment paper or foil and pop it in a cooler bag with your favorite snacks.

  • ½ pound grilled chicken sliced
  • ¼ cup Caesar salad dressing plus extra for the rolls
  • 2 tablespoons shredded parmesan cheese
  • 6 slabs sliced parmesan cheese
  • 2 to 4 leaves green leaf lettuce or Romaine
  • 2 rolls ciabatta

Instructions
 

  • Combine the grilled chicken, Caesar dressing, and shredded parmesan in a bowl. Toss to coat well and set aside.
  • Spread 1 to 2 tablespoons of Caesar dressing on both halves of the ciabatta rolls. Then, add the dressed chicken to the rolls and top with a layer of sliced parmesan, then the lettuce. Close the sandwiches and enjoy!
