We love to make sauces, spreads, and other condiments at home whenever we can – especially if we’ve tried a specialty item from the store and think we can easily recreate it ourselves. It’s generally more cost-effective, plus it gives us room to customize the flavor profile for our tastes. That’s why we created our very own recipe for chipotle mayo!

If you look in our fridge, you’ll probably find a jar of this chipotle mayo 99% of the time. We use it on burgers, sandwiches, tacos, burrito bowls – really anything. We also love to have it as a dip for sweet potato fries or tortilla chips.

When it only takes about 5 minutes to whip up, there’s simply no reason we don’t have this on hand all the time!

Ingredients

  • Mayo – We like to use light mayo for flavored aioli since it’s a bit milder than regular mayo, but you can use either.
  • Chipotle puree – This yields much more potent chipotle flavor and a smoother texture than using a dry seasoning like chipotle powder. We buy a can of chipotles in adobo, then puree the whole thing in a food processor until it’s smooth. Depending on how much chipotle mayo you make, you probably won’t use the whole can, but it’s great to have in your fridge for other recipes (like our chipotle chicken pasta)! It’ll keep for a few weeks in an airtight container. 
  • Lime juice – Chipotle and lime go hand-in-hand, so we like to flavor our chipotle aioli with fresh squeezed lime juice (it tastes better than the bottled stuff!)
  • Sea salt – Add salt to taste, to brighten the flavors and balance out the lime.

How To Make Chipotle Mayo

Simply combine the mayo, chipotle puree, lime juice, and salt in a bowl and whisk or mix vigorously until well combined. That’s it!

Store chipotle mayo in the fridge for up to 2 weeks in an airtight container. We like to use these small glass prep bowls for homemade condiments since they’re just about the perfect size, and they come with lids for easy storage.

Expert Tips

  • Chipotle puree – Buy a can of chipotles in adobo and puree it in a food processor for a smooth, spicy paste you can use to flavor your chipotle mayo. Store the rest in the fridge for other recipes!
  • Fresh lime – Fresh lime juice always tastes better than lime juice from a bottle. You’ll really notice the flavor in this aioli, so grab your juicer!
  • Storage – Mason jars or other glass containers work great for storing homemade condiments in the fridge. We like to use these small prep bowls with lids for easy serving and storing. If you make lots of condiments (or have a bad memory), label your containers with tape so you know what’s inside!

    We almost always have some chipotle mayo in our fridge to use as a dip, a spread for sandwiches, or even as an ingredient for other recipes. I don’t think you can get a better chipotle mayo than one made with real chipotles in adobo.
