There’s a little Mexican restaurant located in La Jolla, CA called Jose’s Courtroom where we had the pleasure of trying one of the most unique burritos we’ve ever had. Featuring chorizo and sweet potato fries this burrito had our attention long after it was gone. And while the burrito was great, it was really the salty sweet combination that got us thinking. 

And that’s how this sweet and savory chorizo sweet potato fry pizza came to be. It hits the spot when you’re craving something a little extra greasy and over-the-top. And if you’re hesitant about the idea of fries on pizza, all we have to say is, don’t knock it ’til you try it!

What This Recipe Entails

Shockingly, even with so many unique toppings, this is one of the easier specialty pizzas we’ve made and only takes about 20 minutes of prep time before your pizza is in the oven. 

  • Prep time: 20 minutes
  • Cook time: 10 to 15 minutes, but depends on your pizza dough

Just note that the cooking time may change. As always, for baking the pizza, you should follow the specific directions for the pizza dough you’re using.

Chorizo Sweet Potato Fry Pizza Ingredients

This is one of the more unique pizza recipes we’ve made. And while at first, the idea seemed pretty outrageous, all the ingredients came together beautifully into a delicious, fun, and decadent pie.

Here’s everything you’ll need:

  • Pizza dough – You can use store bought or homemade pizza dough. We like using a thin crust dough for this pizza. 
  • Ground chorizo – Sub in ground soyrizo for a vegetarian friendly option.
  • Sweet potato fries – Alexia is our go-to for frozen fries.
  • Pizza sauce – Making your own pizza sauce at home is super easy and allows you to tune it to your taste. Start with our homemade pizza sauce recipe here.
  • Mozzarella cheese – We recommend buying a block and shredding it yourself as it’ll melt better than pre-shredded cheese. 
  • Chipotle mayo – You can make your own chipotle mayo at home but we recommend Sir Kensington’s or another squeezable option to make drizzling the pizza quick and easy.

How To Make Chorizo Sweet Potato Fry Pizza

This pizza takes about 30 to 40 minutes to make from start to finish. Here are the steps for making yourself some chorizo pizza:

  1. Prep – Start by cooking the chorizo and sweet potato fries and cutting your onion.
  2. Assemble – Stretch your dough and then top it with sauce, fries, chorizo, onion, and cheese. In that order. Putting the cheese on top keeps the rest of the toppings on!
  3. Bake – Follow the directions for whatever dough you’re using.
  4. Finish – Drizzle the pizza with chipotle mayo and garnish with cilantro to serve.

Storing and Reheating

Leftovers will stay good in the fridge for up to 5 days. You can either reheat the leftover pizza in the oven at 350 degrees F for about 10 minutes or enjoy it cold.

Serving Suggestions

While this pizza can be served on its own, we like to make different specialty pizzas for different occasions. Here are our two favorite ways to serve chorizo sweet potato fry pizza:

Expert Tips

  • Put the toppings on before the cheese. That way the cheese melts over everything and keeps your toppings in place. No more structurally unsound pizza! 
  • Cook the chorizo and fries before putting them on the pizza. You don’t want undercooked toppings or overcooked pizza.
  • Buy a squeeze bottle of chipotle mayo for easy garnishing. 
  • Use soyrizo for an easy vegetarian version of this decadent pizza. 
  • Shred some block cheese as it melts better than the pre-shredded cheese. We don’t recommend using fresh mozzarella for this recipe as you need a shredded cheese that will melt fully over the pie.
  • Let your pizza dough come to room temperature to make it easier to stretch.

The combination of chorizo, sweet potato fries, and chipotle mayo is the ultimate flavor explosion. It’s salty, sweet, and a little bit smoky all at the same time. Yet each ingredient still shines on its own, so every single bite of this pizza is exciting and tasty.

Ingredients
 
 

  • pound ground chorizo cooked
  • 6 to 8 ounces sweet potato fries
  • 1 pound pizza dough
  • ½ cup pizza sauce
  • pound shredded mozzarella cheese
  • Red onion sliced thinly
  • Fresh cilantro de-stemmed and roughly chopped
  • Chipotle mayo

Instructions
 

  • Cook the ground chorizo in a frying pan over medium-high heat until browned, about 8 minutes, breaking the meat up as it cooks.
  • In the meantime, cook the sweet potato fries in the air fryer until crispy, about 10 to 12 minutes at 360 degrees F.
  • Preheat oven to 400 degrees F and lightly flour your hands and a 14-inch round pizza pan. Stretch the dough until it fits the pan, using gravity to help you.
  • Assemble the pizza. Spread the pizza sauce onto the dough in a thin, even layer, leaving about a quarter- to a half-inch of the edge uncovered for the crust.
    Top with sweet potato fries, chorizo, and sliced red onion. Then top with shredded mozzarella cheese.
  • Bake for 16 to 18 minutes, or until edges are golden brown and cheese is bubbly.
  • Finally, drizzle the pizza with chipotle mayo and garnish with cilantro. Serve hot.

Notes

Pizza dough: Feel free to use any kind of pizza dough for this recipe – fresh or frozen (or even homemade if you’re feeling ambitious!). Just remember to leave the dough out for about 1-2 hours (depending on if it’s refrigerated or frozen) before working with it so that it reaches room temperature. Be sure to follow the baking directions for the specific dough you are using.
Pizza sauce: Our homemade pizza sauce is super easy and delicious – get the recipe here.
Sweet potato fries: We cooked about 1/3 of a 20-oz bag of our favorite Alexia sweet potato fries in our air fryer for this recipe.
Chipotle mayo: Chipotle mayo can vary from very plain to very chipotle – we love Sir Kensington’s because it’s a little more flavorful than most, and it tasted great on this pizza. Alternatively, try our homemade chipotle mayo here
