Chicken Bacon Ranchero Pizza

Our chicken bacon ranchero pizza is a spicy twist on the classic chicken bacon ranch, made with thin crust dough, grilled chicken, crispy bacon, and a creamy spicy ranch sauce.

We love crafting unique fusion recipes – and Mexican flavors are probably our favorite place to start. So when we first made our easy ranchero sauce, we wanted to find as many fun ways to use it as possible – it was that delicious. 

We’ve learned that pizza (our favorite food group, right up there with tacos at least) is the perfect template for any flavor combination. And since Alex had been wanting to make a bacon chicken ranch pizza, but I’m not normally a fan, we decided to make one that was more interesting to me by making it a bacon chicken ranchero pizza. 

And the results were amazing.

  • How to make it: Make the spicy ranch sauce. Toss grilled chicken in some spicy ranch, stretch the pizza dough and top with sauce, cheese, chicken, bacon, jalapeno wheels, and onion. Bake until golden brown and crispy. Slice and serve drizzled with extra spicy ranch sauce.

I love a classic chicken bacon ranch pizza, but Nicole doesn’t. And that makes me a little sad because it means we never make them at home. So I had to find a way around that issue. So we created the chicken bacon ranchero pizza. Add a little Mexican flavor and some spiciness and Nicole’s all in. Now I can enjoy one of my favorite pizzas at home!

Key Ingredients

Ingredients for making chicken bacon ranchero pizza: pizza dough, mozzarella and cheddar blend, diced bacon, grilled chicken, sliced red onion, sliced jalapenos, ranch dressing, ranchero sauce, and salt.
  • Thin crust pizza dough – You can use a store-bought pizza dough for this recipe. However, we prefer to make it with our favorite pizza dough recipe from Flour Water Salt Yeast which creates a crispy-yet-soft, flavorful crust. 
  • Spicy ranch sauce – This easy sauce uses light ranch dressing and our homemade ranchero sauce for a spicy alternative to plain ol’ ranch.
  • Two cheese blend – A 2 to 1 ratio of shredded mozzarella and extra sharp white cheddar cheese gives this pizza a tex mex flair.
  • Chicken – We use grilled (or pan-seared) chicken marinated in lime, cooking oil, and salt, and then tossed in our spicy ranch sauce after cooking. 
  • Bacon – Crispy crumbled bacon mingles well with the chicken and spicy ranch on this pizza.
  • Sliced jalapeno – Sliced jalapeno wheels add extra spiciness to this tex-mex inspired chicken bacon ranch pizza.
  • Sliced red onion – Fresh, tangy red onion helps brighten the savory flavors and balances out the heat in this spicy pizza.

How To Make A Chicken Bacon Ranch Pizza

Step 1: Combine ranch and ranchero sauce to make the spicy ranch.

Step 2: Stretch the pizza dough and top it with an even layer of spicy ranch. Leave about a half to one inch of the dough unsauced for the crust.

Step 5: Bake following the dough directions until crispy and golden brown. Slice and top with a drizzle of spicy ranch to serve.

Expert Tips

  • Spicy ranch – If you don’t want to go through the effort of making our easy ranchero sauce for the spicy ranch, for whatever reason, you can use enchilada sauce instead, or make a chipotle ranch with chipotle puree and lime juice. Store bought spicy ranches are also a-ok, we just prefer to make things from scratch.
  • Chicken – We like to use some grilled or pan-seared chicken with a simple marinade of lime, cooking oil, and salt. This gives us a juicy, tender chicken with a little char that tastes great drenched in our spicy ranch sauce. 
  • Cooking temp and time – Always cook your pizza according to the direction for the dough. If your dough doesn’t come with directions (it should but not all do…) 500F for 10 to 12 minutes should do the trick – but keep an eye on it.
  • Pizza dough – We love making pizza dough from scratch! Our favorite recipes are from the Flour Water Salt Yeast cookout. We think it’s the best purchase you can make if you’re interested in making your own dough.
  • Extra ranchero sauce – Use extra ranchero sauce in our sweet potato & black bean enchiladas, chilaquiles rojos, or chicken burritos ranchero. Or freeze it in Souper Cubes for future use!

Ingredients
 
 

  • 1 pound pizza dough preferably thin crust
  • ½ cup spicy ranch sauce plus extra for drizzling
  • 6 ounces grilled chicken
  • 4 ounces mozzarella cheese shredded
  • 2 ounces extra sharp white cheddar cheese shredded
  • 4 ounces bacon diced and fried
  • 1 small jalapeno sliced into wheels
  • ¼ medium Red onion sliced thinly

Spicy Ranch Sauce

Instructions
 

  • Combine ranch and ranchero sauce to make the spicy ranch.
  • Toss the diced, grilled chicken in a ¼ cup of the spicy ranch sauce.
  • Combine the shredded mozzarella and cheddar cheeses to make a cheese blend.
  • Stretch the pizza dough onto a 14 inch pizza pan, and top it with an even layer of spicy ranch, about a ¼ cup. Leave about a half to one inch of the dough unsauced for the crust.
  • Assemble the pizza by topping with the cheese blend, saucy chicken, sliced onion, and jalapeno wheels.
  • Bake following the dough directions until crispy and golden brown. If your dough doesn't have directions, bake at 500F for 10 to 12 minutes, but keep an eye on it. Slice and top with a drizzle of spicy ranch to serve.
