Our maple bourbon bacon burger takes “breakfast for dinner” to a whole new level with a waffle bun, homemade honey butter, maple bourbon syrup, and crispy maple bacon.

We love crafting new burgers as they’re one of the most fun “recipe templates” to customize and can be adapted to almost any flavor or style! We’ve been wanting to create a fun brunch burger and figured what better way to do so than with an Eggo bun? And the idea easily blossomed from there. Waffles, bacon, and maple syrup are some of our favorite breakfast foods, and go together perfectly. Add in the burger patty and you have an ideal brunch or breakfast-for-dinner burger recipe!

- Why we love it: We love making out of the box burgers, and this is such a fun one. We think it fits the brunch or breakfast for dinner theme perfectly.
Ingredients
- Eggo waffles – Yes, you read that right! Our burger recipe uses classic Eggo waffles for the perfect crispy waffle bun. We tried homemade waffles but they quickly became a soggy mess and couldn’t hold up the weight of the burger, so Eggo it is.
- Burger patties – Our classic burger patty recipe provides juicy, savory flavor while still letting the burger toppings shine. You can also use store-bought patties or your favorite recipe.
- Maple bourbon syrup – Our favorite maple syrup by far is Smuggler’s Notch bourbon barrel maple syrup. If you’re in Vermont and can get some, do it. Otherwise, many grocery stores carry a bourbon maple syrup. Worst case scenario, add 2 tablespoons of bourbon to 1 cup of regular maple syrup and simmer it for about 10 minutes to bring it back to the right thickness – this is delicious by the way, just a little boozier.
- Maple bacon – Not to be forgotten, the only thing that might go better with waffles than maple syrup is bacon! We top our maple bourbon burger with crispy pieces of thick cut maple bacon to add a little extra savory flavor. Regular bacon works well too, we just like to be extra decadent.
- Honey butter – Even the best waffles need a little bit of butter, so we whipped up a thick and creamy homemade honey butter to slather on our waffle bun. This was the finishing touch the burger needed; the smooth and creamy texture of the butter emulates the feeling of melty cheese on a burger, with a sweet breakfast-y twist!
Maple syrup may seem like a funny topping for savory recipes, but we promise it’s a great fit. We use maple syrup all the time in our recipes like our Vermont burger and our maple bacon jalapeno pizza.
How To Make Our Maple Bourbon Bacon Burger
- Make the honey butter – Combine softened butter with honey and mix well.
- Grill the burger patties – Grill the patties to your desired doneness. We love our meat thermometer to help us get the perfect cook every time. And if you’re looking to grill indoors, a cast iron grill pan is a must have.
- Toast the waffles – A toasty waffle helps keep the structural integrity of the burger sound. So we like to make our waffles a little extra toasty than how we’d normally eat them.
- Butter the waffles – Spread a little honey butter on the inside face of each waffle. This adds flavor and creaminess to each bite and also helps to keep the burger together.
- Assemble the burgers – Add the burger, bacon, and spoonful or two of maple syrup to the bottom waffle and then close it up. And get ready to enjoy a delicious, but messy burger.

Serving Suggestions
Since this burger is best made for breakfast for dinner or brunch, we wanted to share some of our favorite side dishes that fit the theme.
- Crispy sweet potatoes (especially with a little extra chipotle powder, cayenne, or paprika) pair perfectly with a maple syrup and bacon for a fun “breakfast potato” type feel.
- Or go with a more traditional side like hash browns, fried potatoes, or smashed potatoes.
- And if you wanna lean more towards the lunch side of brunch, pair this burger with a side of fries, or for a healthier alternative, our garlic parmesan eggplant fries.

Ingredients
- 4 Eggo waffles
- 2 Classic Burger Patties
- 8 half slices maple bourbon bacon cooked
- 2 teaspoons bourbon maple syrup
- Honey Butter see ingredients below
Honey Butter
- 4 tablespoons butter softened
- 1½ teaspoons honey
Instructions
How To Make The Maple Bourbon Burger
- Begin by preparing the honey butter. Set aside.
- Prepare and grill the burger patties according to your preferred method, until desired doneness.
- While the burgers are cooking, toast Eggo waffles until golden brown and lightly crisped.
- Butter one side of each Eggo waffle with the Honey Butter.
- Transfer cooked patties to toasted Eggos. Top each burger with 4 pieces of bacon and drizzle a spoonful of bourbon maple syrup over them. Place the Eggo waffles butter side-down to close the burgers.
- Serve with your favorite side, a cold beer, and enjoy!
Honey Butter
- Combine softened butter and honey in a small bowl and stir well until fully mixed.
- Refrigerate until ready to use.
