These chicken tinga tacos use our slow cooker chicken tinga recipe for a quick and easy taco night that you can enjoy any night of the week. Our slow cooker chicken tinga takes 4 hours to cook, but can sit on warm until dinner is ready, or can be made ahead of time and stored in the fridge for up to 5 days.
Mash the avocado in a medium bowl and combine with lime juice and a pinch of salt to taste.
Make the quick pickled peppers by tossing pepper wheels with a little lime juice and sea salt.
Assemble the tacos by layering a little mashed avocado, a pile of chicken tinga, a couple pepper wheels, and a sprinkling of crumbled queso fresco.
