You can easily make this sandwich in less than 10 minutes if you use leftover butter chicken. Make some of our spicy butter chicken for dinner one night, and leave enough for sandwiches the next day. - Butter chicken – We recommend making a fresh batch of our spicy butter chicken for this recipe. However, of course you can make your own favorite recipe, use store-bought butter chicken, or simply use takeout (leftovers work great)!
- Raita – Raita is a yogurt based Indian dip or condiment that makes for a creamy and fresh spread that perfectly compliments the butter chicken and keeps the sandwich from being too heavy or boring. Definitely don’t skip this ingredient!
- Sub rolls – A light, fluffy, and soft sub rolls works best for a butter chicken sandwich as it almost feels like dipping naan right into fresh takeout butter chicken.

How To Make A Butter Chicken Sandwich

Step 1: Make the raita. Combine the Greek yogurt, diced cucumber, cilantro, mint, lemon juice, garam masala, cumin, and sea salt in a bowl.

Step 2: Stir until well combined.

Step 3: Toast the sub rolls. Open them up and place them on a baking sheet, then broil on LOW for about 3 minutes until the insides of the rolls are golden brown.

Step 4: Spread a thick layer of raita inside the sub rolls.

Step 5: Use a slotted spoon to add butter chicken to the sandwiches without too much sauce. Then, use a regular spoon to add extra sauce over the chicken.

Easy Butter Chicken Sandwich With Homemade Raita

Ingredients
- 4 servings butter chicken leftovers, store bought, or takeout
- 1 cup raita see below
- 4 8-inch sub rolls
Raita
- ¾ cup plain Greek yogurt
- ½ cup diced cucumber
- 2 tablespoons finely chopped cilantro
- 1 tablespoon finely chopped mint
- ½ tablespoon lemon juice
- ¼ teaspoon garam masala
- ⅛ teaspoon cumin
- 2 pinches sea salt
Instructions
- Reheat the butter chicken if using leftovers.
- Make the raita. Add the ingredients to a small bowl and stir well to combine.
- Lightly toast the sub rolls. Open the rolls and place them open-faced on a baking sheet, then broil on LOW for 3 minutes or until golden brown.
- Assemble the sandwiches. Spread the raita inside the sub rolls, then use a slotted spoon to add butter chicken to the sandwiches without too much sauce. Then, use a regular spoon to add extra sauce over the chicken.Fill a small bowl with butter chicken sauce, and serve on the side for dipping the sandwich into, au jus style.

Actually I stumbled upon the recipe on my own because I had leftover takeout Butter chicken and no rice but I did have a bollio roll. I then looked online and saw that it’s actually a thing to make a sandwich out of the leftovers. Love it!
