Okay, so we might be a little obsessed with cottage cheese lately… but for good reason! If you haven’t heard, cottage cheese is having a moment because it’s so good for you. And because we love making all sorts of pizza recipes, we had to make a pizza with cottage cheese.

If you’re wondering how you can put cottage cheese on pizza and make it taste good, the answer is simple: blend it! When you smooth it out in a food processor or blender (and add a little extra cheese and garlic), it becomes a velvety, creamy, spreadable cheese that is to die for on a pizza.

Paired with juicy, warm cherry tomatoes and spinach, this cottage cheese flatbread pizza is a flavorful low calorie, high protein vegetarian dinner for two you’ll want to make again and again.

You can make this easy dinner in less than 20 minutes using store bought flatbreads and a few simple ingredients. All you need is a food processor or blender and a large baking sheet.

Cottage Cheese Flatbread Pizza Ingredients

You’ll only need 7 ingredients to make our cottage cheese flatbread pizza recipe:

  • 6-inch round flatbreads
  • Low fat cottage cheese (2%)
  • Shredded mozzarella
  • Minced garlic
  • Cherry tomatoes
  • Baby spinach
  • Sea salt

We like to use Toufayan or Stonefire flatbreads for homemade flatbread pizza nights. Both brands make flavorful and fluffy flatbreads that bake well and make for an easy pizza crust.

Low fat cottage cheese makes this a low calorie, high protein pizza dinner. In our opinion, it has just as much flavor as full fat alternatives! However, you can use full fat cottage cheese if you want this flatbread pizza to be a little more filling and don’t mind the extra calories.

Finally, we like to add baby spinach to a cottage cheese flatbread pizza for extra protein. If you don’t like spinach, fresh basil would be delicious on this pizza instead! Like a cottage cheese margherita pizza.

How To Make Cottage Cheese Pizza

To make a flatbread pizza with cottage cheese, you’ll create a creamy mixture of cottage cheese, mozzarella, and garlic to act as both the sauce and the cheese. Then simply assemble and bake in the oven!

Here’s a step-by-step guide to making our cottage cheese flatbread pizza:

  1. First, preheat the oven to 425 degrees F and line a large baking sheet with parchment paper.
  2. Next, add the cottage cheese, mozzarella, and garlic to a food processor. Pulse until the consistency is smooth.
  3. Then, spread the cheese mixture evenly over the flatbreads, leaving about a quarter inch crust around the edges.
  4. Top the flatbreads with sliced cherry tomatoes and spinach, then finish with a sprinkle of sea salt.
  5. Finally, bake for about 10 minutes until the flatbreads are lightly crisped around the edges. Cool for 1 to 2 minutes before slicing and serving.
