A sweet and savory burrata pizza recipe that makes a perfect upscale dinner for two in just 30 minutes.

Burrata on pizza might just be one of my favorite things. This creamy, luscious cheese just melts in your mouth – it’s the perfect complement to a crispy, golden brown pizza crust!

Paired with the sweet and savory flavors of caramelized shallots, garlic, parmesan, and balsamic glaze, this pizza is everything you want in an elegant, date night worthy dinner. Alex and I had a similar pizza during our first trip to Paso Robles wine country, and we still look back on it as one of our favorite date night meals.

This burrata pizza recipe is the perfect easy dinner when you’re craving something a little more upscale. It comes together in about 30 minutes – half of which is hands-free while it bakes in the oven! One of the many reasons we love pizza nights.

What This Recipe Entails

All you have to do for prep work is caramelize the shallots. Otherwise, you’ll simply stretch the dough, top the pizza, and bake!

Ingredients

  • Pizza dough – We love to make dough from scratch using recipes from our favorite cookbooks, Mastering Pizza and Flour Water Salt Yeast (check them out if you want to get into making your own pizza dough!), but you can also use store bought dough here.
  • Burrata cheese – Burrata is the star of the show here, so make sure to buy a high quality cheese! Locally sourced burrata has the best flavor.
  • Toppings – Garlic, olive oil, caramelized shallots, parmesan, and balsamic glaze complement the sweet burrata cheese perfectly.

How To Make A Burrata Cheese Pizza

  1. First, caramelize the shallots. Add vegetable oil to a frying pan and cook the shallots over low heat until browned, stirring every once in a while to prevent sticking.
  2. Next, assemble the pizza. Stretch the dough to fit a floured 14-inch pizza pan. Spread olive oil and minced garlic over the dough. Then top with burrata, scooping out the creamy cheese to dollop around the pizza before tearing up the casing and adding that, too. Top with caramelized shallots, parmesan, and a pinch of salt.
  3. Bake for about 10 to 15 minutes, or until the cheese is bubbly and the crust is golden brown.
  4. Finish and serve. Drizzle the pizza with balsamic glaze before slicing.

Serving Suggestions

This pizza is on the lighter side, so we recommend serving with 1 or 2 side dishes for a more complete meal. Here are some of our favorites:

  • Dressed greens – We like to toss sweet baby lettuce in a flavored olive oil and balsamic vinegar pairing.
  • Caesar salad – A classic side dish for Italian dinners, you can never go wrong with a Caesar salad.
  • Roasted potatoes or french fries – Elegant or casual, you choose! Potatoes always go great with pizza.
  • Garlic bread – Why not add more carbs to your meal? We love garlic bread with pizza night!

Do you drain burrata?

Yes, drain the excess liquid from the package before using burrata. It’s typically stored in a brine to preserve its texture.

Does burrata go on pizza before or after cooking?

We like to put burrata on this pizza before cooking, but you can also put it on after if you prefer – it’ll be delicious either way! If you choose to put it on after baking, we would still recommend using the mozzarella casing before baking. Simply scoop the burrata into a bowl and set it aside to use after baking.

Expert Tips

  • Burrata cheese has a casing made from mozzarella – use all that deliciousness! We recommend scooping out the creamy burrata first to dollop on the pizza, then tearing up the casing and evenly distributing it to get full cheese coverage.
  • Oven temperature and baking time – These will vary based on the type of dough you use. If you’re using store-bought, check the packaging for oven temp recommendations. As for timing, always set the timer for a few minutes less than you think it needs so you can keep a close eye on your pizza and prevent the crust from burning.
  • Balsamic glaze – A thick glaze works best for topping pizzas, versus just using balsamic vinegar. You can usually find this in a squeeze bottle right near the balsamic vinegar.

Ingredients
 
 

  • 1 tablespoon neutral oil vegetable or olive oil
  • 2 medium shallots sliced thin
  • 450 grams pizza dough
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons minced garlic
  • 8 ounces burrata
  • 1 to 2 tablespoons shredded parmesan cheese
  • 1 pinch sea salt
  • Balsamic glaze

Instructions
 

  • First, caramelize the shallots:
    Add neutral oil to a frying pan and warm over low heat until shimmering. Add the shallots and cook until browned, stirring every once in a while to prevent sticking, about 10 to 15 minutes. Remove from heat and set aside.
  • Preheat the oven to 525 degrees F. Lightly flour your hands and a 14-inch pizza pan, then stretch the dough into a roughly 12 to 14 inch circle to fit the pan.
  • Assemble the pizza:
    Spread olive oil and minced garlic over the dough, leaving about a quarter inch of space around the edges for the crust.
    Next, slice the burrata in half and scoop out the creamy cheese from the casing. Dollop this over the dough and gently spread it around. Then, tear the casing into small pieces and add these until the dough is covered with plenty of cheese.
    Finally, top with caramelized shallots, parmesan, and sea salt.
  • Bake for about 10 to 15 minutes, or until the cheese is bubbly and the crust is golden brown.
  • Let the pizza cool for a minute or two. Then, drizzle with balsamic glaze, slice, and serve.
