Grilled Chicken Sandwich With Roasted Red Peppers Ingredients

This grilled chicken sandwich recipe may look like it requires a ton of ingredients – but most of the ingredients are for the spicy roasted red pepper spread! Otherwise, all you need to make this sandwich is a simple marinade and a few toppings.

For the chicken, you’ll need a simple 3-ingredient marinade:

  • Chicken breast
  • Olive oil
  • Lemon juice
  • Salt

For the roasted red pepper sauce, you’ll need:

  • Olive oil
  • Red bell pepper
  • Red onion
  • Garlic
  • Paprika
  • Ground red cayenne pepper
  • Salt
  • Water
  • Lime juice
  • Red wine vinegar

To build the sandwich, you’ll need a bun and some additional toppings:

  • English muffins
  • Romaine lettuce
  • Vine tomato
  • Pepper jack cheese

If you don’t want to make the roasted red pepper spread, you can always substitute this with your favorite condiment. (Store-bought roasted red pepper hummus would be a great alternative!)

How To Make The Best Grilled Chicken Sandwich With Roasted Red Peppers

We love this grilled chicken sandwich because of its unique sauce, made with roasted red peppers. It’s easy to quickly whip up this sauce while the chicken marinates – all you need is a frying pan and a food processor!

Here’s a step-by-step breakdown for how to make our grilled chicken sandwich with roasted red peppers:

  1. First, marinate the chicken. Combine the chicken with olive oil, lemon juice, and salt in a bowl and let it marinate at room temperature for 20 to 30 minutes.
  2. In the meantime, prepare the roasted red pepper sauce. First, heat olive oil in a small frying pan over medium-low heat. Add the peppers and onions and cook until softened, stirring very infrequently.
  3. Then, add the water and lime juice to deglaze the pan. Stir in the garlic, paprika, and cayenne pepper. Cook for another few minutes, just enough to infuse the peppers and onions with flavor, and remove from heat.
  4. Next, transfer the contents of the frying pan to a food processor. Add the red wine vinegar and pulse until mostly smooth. Add salt to taste and set aside.
  5. Once the chicken has marinated, grill or cook on a cast iron pan until done, flipping every 3 minutes. Melt the pepper jack cheese onto each piece of chicken during the last few minutes of cooking. Then, transfer the chicken to a plate to rest before assembling the sandwiches.
  6. Finally, assemble your grilled chicken sandwich with lettuce, tomato, and roasted red pepper spread on a toasted English muffin. Serve immediately.

When cooking the peppers and onions, you want them to caramelize a bit before adding the water and lime juice. That’s why we recommend stirring them infrequently! Then when you add the liquid, it will help to release the peppers and onions from the pan (this is known as deglazing).

Note that the roasted red pepper spread is quite spicy. If you’d like less heat (or none at all), reduce the amount of paprika and cayenne or omit them entirely.

Serving Suggestions

We recommend serving this fun, flavorful take on a grilled chicken sandwich with chips, french fries, or tortilla chips and salsa! It makes for a delicious and satisfying lunch you’ll be glad you put in the effort for.

Grilled Chicken Sandwich Variation Ideas

If these toppings aren’t speaking to you and you’re wondering what to put on a grilled chicken sandwich instead, here are a few ideas we love:

  • Add goat cheese and roasted red peppers to your grilled chicken sandwich instead of making the sauce like this recipe calls for. Simply roast the peppers in a frying pan with some oil and salt, then add them on top of the chicken sandwich!
  • Swap the red pepper sauce with other creamy condiments like mashed avocado, hummus, or chipotle mayo for a different flavor profile.
  • Skip the cheese and go with classic toppings like lettuce, tomato, and onion for a healthier grilled chicken sandwich.
  • Amp up the flavor in our recipe with additional toppings like banana peppers or pickles!
