On a little side note, sometimes it’s funny how recipes come together. The original idea we had for this recipe was to make it a stuffed chicken. It turns out that stuffed chicken can be really, really messy, and results in a hard-to-follow recipe. So we pivoted. Since we loved the flavors we already had, we just had to change our presentation. By simply searing the chicken and serving it on our homemade blueberry lemon goat cheese spread, we made this recipe far more approachable – and, honestly, ended up with a better dish in the end.
Moral of the story: it’s okay to fail, because that’s how you learn! And when you fail with an open mindset, it’s much easier to pivot and end up with something great.

Blueberry Lemon Goat Cheese Chicken Recipe Ingredients
To make this easy date night chicken recipe, you only need 6 ingredients:
- Chicken breast
- Lemon (zest and juice)
- Olive oil
- Salt & pepper
- Goat cheese
- Wild blueberry preserves

How To Make Blueberry Lemon Goat Cheese Chicken
Before making this blueberry lemon goat cheese chicken recipe, you’ll have to prep the chicken breast. We like to take 2 large chicken breasts, trim the excess fat off, and then slice off the thinner parts so that you’re left with a nice shape that’s approximately the same thickness all the way around. If you want, you can use a meat tenderizer to pound out the thicker sections as well.
Once the chicken breast is prepped, you can make this recipe in just a few simple steps:
- Rub the chicken breasts with lemon juice, olive oil, salt and pepper and marinate at room temperature for about 20 to 30 minutes.
- In the meantime, make the blueberry lemon goat cheese spread. Crumble the goat cheese into a small mixing bowl, then add lemon zest, lemon juice, and wild blueberry preserves. Mix thoroughly until combined, then refrigerate.
- Preheat the oven to 400 degrees F and preheat a cast iron skillet over medium-high heat until it’s very hot. Then, sear the chicken in the cast iron pan until it’s browned on the bottom, about 3 to 4 minutes. Flip the chicken over, then transfer the pan to the oven and bake until cooked through, about 15 to 20 minutes.
- Finally, plate the dish. Spoon about 2 tbsp of the goat cheese spread into the center of the plate, then spread it out into a circle using the back of the spoon. Place the chicken breast on top of the goat cheese spread, then top with about 1 tbsp of wild blueberry preserves and a pinch of lemon zest. Serve immediately.
We definitely recommend refrigerating the goat cheese spread while the chicken cooks so that it’s nice and thick when you go to spread it on the plate. This will help keep it from getting too runny under the steaming hot chicken breast, and cut down on some of the mess as you enjoy your dinner!

- First, rub the chicken breasts with lemon juice, olive oil, salt and pepper and marinate at room temperature for about 20 to 30 minutes.
