Bacon egg and cheese on a bagel is one of our favorite breakfasts. It’s been a go-to for both of us since college, satisfying our cravings for something savory, cheesy, and filling when we’re especially hungry!

Not to mention, we love treating ourselves to a bacon egg and cheese from the local deli whenever we’re on the go. You can easily eat this breakfast sandwich anywhere – in the car, on a walk, or right at home. Wrap it up in foil and take it wherever you need to for a delicious and satisfying breakfast.

What This Recipe Entails

This recipe doesn’t require much prep time. All you need to do is slice and toast your bagels, and whisk the eggs.

  • Prep time: 5 minutes
  • Cook time: 10 to 12 minutes

Bacon Egg And Cheese Breakfast Sandwich Ingredients

It’s all in the name! Here’s what you’ll need to make a bacon egg and cheese bagel sandwich:

  • Bagels
  • Bacon
  • Eggs
  • Milk
  • Sharp cheddar cheese

You’ll want to use a high quality bacon for your homemade bacon egg and cheese breakfast sandwich – it’s the star of the show! We always love Oscar Meyer bacon.

To make a fluffy egg, you’ll add a splash of milk before whisking. If you don’t have milk, you can use any milk alternative like almond milk, oat milk, soy milk, or lactose-free milk. You can even use water in a pinch!

It’s also important to get high quality sliced cheddar cheese for this breakfast sandwich. We love to use thick-cut sliced cheese from Cabot or Tillamook (it melts beautifully!). Choose your favorite brand and don’t be afraid to pile the cheese on this bagel sandwich 🙂

Finally, any kind of bagel will work for a bacon egg and cheese, but we recommend using a savory bagel like everything, onion, sesame, asiago, or even jalapeno cheddar! Our personal favorite is a bacon egg and cheese on an everything bagel. This was a staple for both of us during college. The deli on campus had the best bagel sandwiches – although this recipe certainly rivals theirs!

How To Make A Bacon Egg And Cheese Bagel Sandwich

It’s super easy to make a bacon egg and cheese bagel at home! Here’s what you need to do:

  1. First, fry the bacon over medium-high heat until crispy, about 1 to 3 minutes per side. Drain on a paper towel lined plate and set aside.
  2. Next, toast the bagels to a golden brown.
  3. Then, combine the eggs and milk in a bowl and beat well.
  4. Add about a tablespoon of the bacon grease to a small nonstick frying pan and heat over medium to medium-low. You want just enough grease to lightly coat the bottom of the pan.
  5. Then, add the beaten egg to the frying pan. Let it cook for about 3 to 4 minutes, until the bottom has solidified and the top is mostly solid. Carefully flip the egg over, then cook for another 1 to 2 minutes until the bottom is solidified. Flip one more time.
  6. Now, add the sliced cheddar to one half of the egg. Fold the plain half of the egg over the cheese to make a semicircle with the cheese sandwiched inside. Let the cheese melt for about 30 seconds to 1 minute, then use the edge of your spatula to cut the semicircle in half, into two triangles.
  7. Next, transfer the eggs to the toasted bagels. Top each sandwich with 2 strips of bacon, then close and serve!

Tips For Success

Here are a few tips to help you make the best bagel sandwich:

  • Cut the bacon in half before frying! This makes the strips fit in the pan better so they fry more evenly, and also makes them a great size for bagel sandwiches. Then, when you top each sandwich with 2 pieces of bacon, you can layer the 4 half-pieces to cover the whole surface area of the egg.
  • For frying the egg, choose a frying pan that will yield the correct size egg to match the diameter of your bagel (once you’ve folded the egg and cut it in half). Our homemade New York style bagels are the perfect size for making 2 eggs in a 7-inch frying pan.
  • Make sure you don’t over-toast your bagel. A lightly toasted bagel works best for breakfast sandwiches. You want it to be easy to bite into, yet provide a little bit of crunch.

Scaling This Recipe

This recipe makes 2 bacon egg and cheese bagel sandwiches. To make just one bagel sandwich, you’ll want to fold the egg into a semicircle after adding the cheese, then fold it again to make a thicker triangle.

When you use just one egg in the same size frying pan, it’ll be a little thinner so you can easily fold it twice to make the correct shape. It may be slightly thicker and messier, but hey – the best bagel breakfast sandwiches are the messiest!

For scaling this recipe up, we recommend making it in multiples of 2 and following the directions exactly. You’ll have to do them in batches, or use multiple frying pans for the egg at once, since you can only make 2 eggs at a time per pan.
