This decadent bacon egg and cheese grilled cheese hits the spot anytime of day, whether for breakfast, lunch, dinner, or a late night snack.

We love a good breakfast sandwich. It’s actually probably both Nicole and my favorite breakfast or brunch food. So when we came up with the idea of combining a classic bacon egg and cheese with a grilled cheese sandwich, we were all about it!
This decadent breakfast sandwich may lean a little more to the brunch side of things, thanks to the grilled cheese part. But no matter what you call it, or when you eat it, you’ll be sure to love the extreme cheesiness that is this bacon egg and cheese grilled cheese.
What This Recipe Entails
Much like any breakfast sandwich, this recipe does take a little bit of time and effort to come together. You’ll need to make bacon, cheesy scrambled eggs, and a regular grilled cheese before combining everything together.

If you have leftover bacon, it makes this recipe much easier! Then, you’ll only need to make eggs and the grilled cheese, both of which can be made quickly and at the same time.
Bacon Egg And Cheese Grilled Cheese Ingredients
Okay, so this is exactly what it sounds like and all the ingredients are in the title. But anyways, here’s everything you’ll need to make this decadent breakfast grilled cheese:
- Bacon
- Eggs
- American cheese
- Bread
- Butter
In order to do right by this delicious sandwich, we highly recommend using fresh bakery bread for this recipe. Something like an Italian loaf works really well.
And another note: make sure you have lots of cheese! A bacon egg and cheese is cheesy. A grilled cheese is cheesy. So when you put them together, you need all the cheese.

How To Make A Breakfast Grilled Cheese
Just to set the stage for you, this recipe is basically like making a grilled cheese sandwich and making scrambled eggs, and then combining them into one amazing breakfast sandwich like nothing you’ve had before.
Sounds delicious, right?
Here’s how to make a bacon egg and cheese grilled cheese sandwich:
- Start by making sure all of your ingredients are prepped and ready to go as you’ll be making eggs and a grilled cheese at the same time. To learn more about the art of mise en place, check out our article here.
- Next, grease a non-stick frying pan for the eggs and preheat a cast iron griddle for the grilled cheese over medium-low heat.
- Once you’re all set to start cooking, assemble your grilled cheeses right on the pan – butter the outsides of the bread, then stack: bread, three slices of American cheese for each sandwich, and then the other slice of bread.
- In the meantime, scramble the eggs over medium heat and melt in 3 slices of American cheese.
- Once the eggs and grilled cheese are finished cooking, carefully open up the grilled cheese on a plate or cutting board to prepare it to be stuffed. Add the scrambled eggs to both grilled cheeses, and then top the eggs with 3 slices of bacon per sandwich.
- Finally, close the grilled cheeses back up, slice in half, and serve!
Here are some tips to ensure your bacon egg and cheese grilled cheese can be its best self:
- Cut the strips of bacon in half to make cooking, assembling, and eating, easier. If you opt for this, you’ll use 6 half strips of bacon per sandwich.
- For an extra decadent breakfast, use the bacon grease in place of butter to cook your eggs. You can even brush some bacon grease onto the outside of the bread for your grilled cheese instead of using butter.
- Start the grilled cheese first, and then make the eggs while your sandwich cooks. The grilled cheese will take more time than scrambling the eggs will.

While this recipe really doesn’t need a side, we wanted to give you some options since brunch tends to mean eating more than your fill. With this bacon egg and cheese grilled cheese you can’t go wrong with either a breakfast or lunch type of side! Here are our recommendations:

- Fries or tater tots
- Easy smashed potatoes

Breakfast Grilled Cheese Variations
As with any breakfast sandwich, there are really an unlimited number of variations you can make. It just comes down to your imagination and the effort you want to put in. Here are some simple variations that we love:
- Add your favorite condiments just as you would for scrambled eggs. Think hot sauce, ketchup, or chipotle mayo.
- Use cheddar or your favorite cheese instead of American. We opted for American cheese for this recipe because it melts the best and gives that classic breakfast sandwich taste, but feel free to switch it up!
- Sub in sausage or any other breakfast meat in place of the bacon. Bacon is always our choice, but you do you. It is, after all, your breakfast (or lunch or dinner or midnight snack… we don’t judge)!
