A gooey, cheesy, stuffed burger featuring all your favorite game day flavors: jalapeno, cheddar, bacon, beer, and onion rings.
September has never been my favorite month. With it comes back to school and the end of summer. Not very fun things. However, the saving grace of September is the start of the football season.
Nicole and I figured there’s no better way to celebrate week 1 of the NFL season than with a cold beer, a side of buffalo wings, and September’s Burger of the Month: The Kickoff Burger.
The Kickoff Burger features a classic burger stuffed with a jalapeno bacon beer cheese, topped with cheddar cheese, a crispy onion ring, and Sir Kensington’s Special Sauce all put together on a potato bun.
The star of the show is the rich, gooey, beer cheese that comes through in every single bite.
Making these stuffed burger patties was super easy using our Cuisinart Stuffed Burger Press. Here’s how we did it:
- After making your burger meat, split it into even amounts as usual. We like to aim for third-pound burger patties.
- Place approximately two thirds of the meat for one patty in the press, and use the small press to create your pocket for stuffing.
- Scoop the cheese, or other stuffing, into the pocket you just created.
- Take the remaining third of the meat, flatten it to approximately the diameter of the press to create your patty lid.
- Place the lid into the press, covering the stuffing, and use the regular press to seal your patty.
Once your patties are made, cook them how you normally would. However, when stuffing the burger with something cold, such as a beer cheese, it is best to cook the patties a little longer than normal to ensure the middle is heated through and fully cooked.
Even though a stuffed burger takes a little more time and effort, it doesn’t have to be hard, and we can assure you that it is well worth it. A stuffed patty is a great way to mix up any burger recipe and the only limit to the stuffing is your imagination.
The Kickoff Burger is the perfect meal for a tailgate, a football party, or to just treat yourself for a special game. And just as intended, it pairs perfectly with some spicy buffalo wings (psst keep an eye out for our Buffalo Wing recipe coming soon!) and a cold local beer such as one of our new favorites, the Blonde Ale from MadeWest Brewing Company.
We hope that you try our stuffed Kickoff Burger and enjoy this football season! Cheers!

The Kickoff Burger
Equipment
- Stuffed burger press optional
- Cast iron grill pan optional
Ingredients
The Patties
- 2 Classic Burger Patties stuffed with Jalapeno Bacon Beer Cheese, see below
The Buns
- 2 potato buns
The Jalapeno Bacon Beer Cheese
- 2 ounces cream cheese
- ¼ cup beer
- 2 ounces extra sharp cheddar cheese
- 2 slices cooked bacon chopped
- ½ jalapeno diced
- Salt to taste
The Toppings
- 2 slices extra sharp cheddar cheese
- 2 onion rings
- 2 tsp Sir Kensington's Special Sauce
Instructions
How To Assemble The Kickoff Burger
- Prepare the Jalapeno Bacon Beer Cheese first, then let it cool in the refrigerator for at least 30 minutes.
- Prepare the burger meat, following steps 1 to 2 of our Classic Burger Patties recipe. When forming the patties, stuff each patty with about 2 tablespoons of the cooled Jalapeno Bacon Beer Cheese.
- Grill the burger patties according to your preferred method, until desired doneness, topping with sliced cheddar cheese about halfway through cooking. Since these burgers are stuffed with cold cheese, we recommend cooking for a few extra minutes than you normally would.
- Spread about 1 teaspoon of Sir Kensington's Special Sauce on the inside of each bun.
- Transfer cooked patties to buns and top each with a crispy onion ring.
- Serve hot with your favorite side, a cold beer, and enjoy!
Jalapeno Bacon Beer Cheese Filling
- Shred the 2 ounces extra sharp cheddar cheese with a cheese grater and set aside.
- Melt the cream cheese in a small saucepan over medium-low heat, stirring occasionally.
- Slowly add the beer, stirring or whisking constantly until fully incorporated.
- Add the shredded cheese a little at a time, whisking constantly to combine, until fully melted.
- Remove from heat and stir in the chopped bacon, diced jalapeno, and salt to taste.
- Transfer to a bowl and let cool at room temp for about 10 to 15 minutes, then refrigerate for at least 30 minutes before stuffing into burger patties.
