Pineapple Coconut Water Mocktail

This simple 4-ingredient pineapple coconut water mocktail is the perfect refreshing, non-alcoholic drink to enjoy all summer long. The tropical flavors pair perfectly with fresh appetizers, fish tacos with mango salsa, or light pizzas (like our favorite, elote pizza!).

Nicole is obsessed with coconut water. It’s her favorite treat when she’s looking for something extra hydrating (like when we’ve had one too many drinks…). Recently, we made a delicious pineapple coconut margarita with coconut water, and we wanted to bring that flavor profile over to a mocktail.

Our pineapple coconut water mocktail uses just 4 simple ingredients to create a tropical, slightly sweet, and surprisingly complex drink that is perfect for sipping on under the sun. We can’t wait until we’re sitting on the beach with a pitcher of these by our side 😎.

Pineapple and coconut is the ultimate summertime flavor combo. This mocktail gives off pina colada vibes, but without the alcohol and extra sugar – so I can drink it whenever I like and feel good about it. I’m already looking forward to enjoying one of these with some coconut shrimp this summer!

Key Ingredients

Ingredients for a pineapple coconut mocktail: lime juice, coconut water, pineapple juice, and agave nectar.
  • Coconut water – Make sure you choose a brand that uses 100% pure coconut water without any sugar or other ingredients added. We love brands like Harmless Harvest and Zola for pure coconut water.
  • Agave nectar – Agave nectar is another ingredient you wanna be careful with because many brands sell agave syrup – agave nectar diluted with water. So make sure you buy a quality brand like Agave In The Raw which is truly 100% agave nectar. 
  • Pineapple juice – We have found that pineapple juice doesn’t last well once it’s opened and since we tend to only use a little at a time, we end up throwing away too much. And we hate food waste! So we’ve recently started buying a large can of pineapple juice and freezing it in various sized ice cube trays and Souper Cubes for easy use whenever we need it.

Variations

When we first made this recipe we topped it off with some club soda to give the mocktail a slight sparkle. While we ultimately decided that we liked this recipe more without the bubbles, it made for a wonderful, lighter cocktail that we’d happily enjoy on a warm summer day. 

So if you are big fan of bubbles or are simply looking for a lighter, more refreshing mocktail, add a little sparkling water on top! Even just an ounce will do.

How To Make

  1. Rim the glasses (optional but highly recommended) – To rim a glass with toasted coconut flakes there’s a couple important – but easy! – steps to take.
    1. Toast the coconut flakes in a pan over low heat until fragrant and slightly browned. 
    2. Put the toasted coconut flakes on a small plate and lightly crush them up. This is easy to do with your hands – just make sure to give them a second to cool first.
    3. Put a small amount of agave nectar or simple syrup on a small plate or in a small bowl. Dip the rim of your glass into the syrup.
    4. Then press the rim into the coconut flakes to coat it well. They should easily stick to the syrup on the rim.
  2. Make the mocktail – Add all the ingredients to a shaker with ice. Shake to chill and then strain over ice into the prepared glasses.
  3. Garnish and serve – We like to add a pineapple wedge to the glass for a little extra garnish and a delicious snack.

Expert Tips

  • Garnishes are important! – Garnishes and the experience (vibes) are what make mocktails, mocktails, and not just fancy juice. When we made this without garnishes the first time around, we couldn’t quite decide if it was good enough to be a “mocktail,” but adding the garnishes instantly changed our minds!
  • Rimming with coconut flakes – While a lime generally works well for rimming a glass with salt or sugar, coconut flakes are a little harder to make stick and really need something stronger. So we use either agave nectar or simple syrup to make sure we can get a good, thick, and even coating of toasted coconut all around the rim. 
  • Glass choice – We like to use our thin-walled rocks glasses because they are easy to rim and just feel right to us for this drink. But as we mentioned in an earlier tip, the vibes are important, so choose the glass that speaks to you. 
  • Use high quality ingredients – 100% pure coconut water and real agave nectar are important to make this mocktail taste its best. If you use coconut water with additives or agave syrup, the mocktail will taste off.

Serving Suggestions

There are three ways that we love enjoying mocktails:

  1. With some light apps as an afternoon treat – Warm days, a light mocktail, and a couple apps makes for a perfect afternoon. Check out our roasted garlic and tomato bruschetta, Spanish fried cauliflower, and easy Mexican street corn dip for some ideas.

Coconut Water Mocktail FAQs

Any tropical or acidic juice works really well with coconut water – things like pineapple, lime, and orange juice. And if you’re looking to add a sweetener to coconut water, our go-to for mocktails is agave nectar because it has some of the same notes as tequila and stays in the tropical family of flavors.

Coconut water is great for hydration and rich in electrolytes and antioxidants, so it’s really good for you! We definitely recommend using 100% coconut water and avoiding brands that add sugar or other additives, because you won’t get the same benefits and the flavor just isn’t as good.
