Pomegranate Mocktail
This 4-ingredient pomegranate mocktail combines pomegranate juice, cranberry rosemary simple syrup, lime juice, and ginger beer for an easy, bright, and refreshing non-alcoholic drink.

Don’t get us wrong, we still love our cocktails. But lately we’ve been looking for some non-alcoholic options when we’re craving a special drink to enjoy.
This pomegranate mocktail hits the spot perfectly! It’s refreshing, bright, tart, and a little sweet. And it has the layered flavors expected of a proper cocktail, so it feels like sipping on something fancy (and not just a glass of juice).

Why We Love This Recipe
I love gin mules, but when I find myself craving a ginger beer cocktail I don’t always want the alcohol! This pomegranate mule is the perfect answer when I’m looking for a bubbly, slightly sweet, and refreshing drink.

Key Ingredients

- Ginger beer – We like ginger beer with high carbonation for the best mouth-feel, so Gosling’s is always our go-to.
- Lime juice – Fresh lime juice always makes this drink better, but we don’t always have that around. Bottled lime juice works well, but just be sure to use an unsweetened one.
- Cranberry rosemary simple syrup – This is our secret ingredient for this mocktail that makes it so delicious. The added tartness of the cranberry, herbal notes of the rosemary, and a little sweetness creates the depth of flavor that many mocktails lack. Plus, the flavor combination makes this mocktail extra on-theme for Thanksgiving and Christmas. Check out our easy cranberry rosemary simple syrup recipe for the details.
- Pomegranate juice – We always use Pom Wonderful because it’s 100% pomegranate juice and unsweetened. Using high quality, minimally processed ingredients is really important to us, and Pom Wonderful does that wonderfully 😝.

Variations
- Make it a cocktail – Add 1.5 ounces of gin to make this a delicious cocktail! This is a great option if you want a true cocktail, or if you’re making mocktails for a group and have a few friends that want to get a little crazy.
- Batch prep – Combine the pomegranate juice, lime juice, and cranberry rosemary simple syrup in a pitcher and stir well to combine. Let your guests pour themselves a glass and top with ginger beer. We want to make sure the ginger beer stays fresh and carbonated!
- Adjust to your taste – This is a sweet drink. If you want it to be less so, use half an ounce of the simple syrup. You still want the cranberry and rosemary flavors to come through, so don’t remove it entirely. If the drink is still too sweet, add a splash of both lime and ginger beer; the acidity and brightness will cut the sweetness.

- Top with ginger beer and stir gently to combine.
- Garnish with a lime wedge, lime peel, or pomegranate arils.
