This pomegranate mocktail hits the spot perfectly! It’s refreshing, bright, tart, and a little sweet. And it has the layered flavors expected of a proper cocktail, so it feels like sipping on something fancy (and not just a glass of juice).

  • Lime juice – Fresh lime juice always makes this drink better, but we don’t always have that around. Bottled lime juice works well, but just be sure to use an unsweetened one. 
  • Cranberry rosemary simple syrup – This is our secret ingredient for this mocktail that makes it so delicious. The added tartness of the cranberry, herbal notes of the rosemary, and a little sweetness creates the depth of flavor that many mocktails lack.   • Batch prep – Combine the pomegranate juice, lime juice, and cranberry rosemary simple syrup in a pitcher and stir well to combine. Let your guests pour themselves a glass and top with ginger beer. We want to make sure the ginger beer stays fresh and carbonated!
  • Adjust to your taste – This is a sweet drink. If you want it to be less so, use half an ounce of the simple syrup. You still want the cranberry and rosemary flavors to come through, so don’t remove it entirely. If the drink is still too sweet, add a splash of both lime and ginger beer; the acidity and brightness will cut the sweetness.
