We’re lucky enough that we always get to work from home and make cozy, comforting, fresh lunches every day. 

But we know that not everyone has that luxury. However, when you do get a nice, quiet, work-from-home day, we wanted to share with you one of our favorite hot lunch melts that’ll absolutely be the highlight of your workweek. (This sandwich tastes great on the weekends too!)

This chipotle chicken melt is gooey, creamy, crunchy, and a little spicy all at the same time – making it the perfect decadent lunch when you’re craving something comforting and warm. We love to pair it with an easy side like some chips and fire roasted salsa or mango pico de gallo.

  • Chipotle mayo – Spread a thick layer of our easy homemade chipotle mayo inside this chicken melt for the best creamy, smoky chipotle flavor.
  • Pepper jack cheese – Pepper jack brings a ton of flavor, a smooth creamy texture, and a little extra kick to this sandwich. We find that it pairs perfectly with the chipotle flavor. However, cheddar cheese would be our recommendation if you don’t want the extra spice.
  • Sourdough bread – The bold, slightly acidic taste of sourdough is perfect for melts of all types, especially when they’re spicy. Get some fresh made sourdough from the bakery section of the grocery store for best results!

How To Make A Chipotle Chicken Melt

Step 1: Combine the chicken and seasoning in a frying pan with a little cooking oil over medium high heat.

Step 2: Once the chicken is fully cooked through, about 6 to 8 minutes, transfer the chicken to a bowl and set aside.

Step 3: Turn the heat to medium and add a little more oil to the pan along with the peppers and onions. Cook for about 3 to 4 minutes to soften the veggies then add lime juice and salt. Stir to combine and remove from heat.

Step 4: Butter the outside of each slice of bread.

Step 5: Assemble each sandwich in the following order: bread, chipotle mayo, a single layer of cheese, peppers and onions, chicken, another layer of cheese, bread.

Step 6: Cook over medium low heat until crispy (about 4 minutes), flip and do the same on the other side.

Step 7: Transfer the perfectly crispy sandwiches to a cutting board and slice in half.

Expert Tips

  • Use pre-cooked chicken – Our crockpot chipotle chicken, rotisserie chicken, or plain, leftover grilled chicken are a great starting point for the chipotle chicken in this sandwich. Instead of starting with raw chicken, shred or chop plain cooked chicken and simply reheat in a frying pan with the seasonings. This will cut down on cook time and simplify preparation.
  • Make a large batch for meal prep –  Even if you’re only making one sandwich for lunch, you can cook up a larger batch of the chicken and veggies to use throughout the week. They’ll stay fresh in an airtight container in the fridge for up to 4 days. Then you can enjoy easier chipotle chicken melts every day!
  • Mix it up – These cooked chicken and veggies also taste great in a wrap, over a salad, or in a Southwest-style burrito bowl.

  • ½ pound raw chicken breast sliced into 1.5-inch long strips
  • 1 teaspoon chipotle powder
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • 1 tablespoon cooking oil
  • ½ medium red bell pepper thinly sliced
  • ¼ medium red onion thinly sliced
  • 4 slices sourdough bread
  • 1 to 2 tablespoon butter
  • 2 tablespoons chipotle mayo
  • 6 to 8 slices pepper jack cheese

Instructions
 

  • Add cooking oil and sliced chicken to a small frying pan and season with chipotle powder, paprika, garlic powder, onion powder, and salt. Cook over medium-high heat until cooked through, about 6 to 8 minutes, stirring occasionally.
  • Transfer cooked chicken to a small bowl and set aside. Add more cooking oil to the frying pan, lower heat to medium, and add sliced bell pepper and onion. Sauté until vegetables are slightly softened, about 2 to 3 minutes. Then add in lime juice and a pinch of salt. Stir to combine and remove from heat.
  • Assemble the sandwiches. First butter the outside of each slice of bread, then assemble as follows: bread, chipotle mayo, a single layer of cheese, peppers and onions, chicken, another layer of cheese, bread.
  • Cook until the bottom turns golden brown and the cheese is melted, about 3 to 4 minutes, then carefully flip the sandwich and cook until the bottom is golden brown, another 3 to 4 minutes.
  • Transfer chipotle chicken melt to a cutting board, slice in half, and serve immediately.
