This recipe was born from a lazy college kid wanting an easy and quick lunch and realizing there wasn’t much food in the fridge (not that there ever was) other than cheese and leftover chicken. 

A fun and flavorful sandwich has always been one of our go-to meals when we don’t really feel like cooking. So we elevated our classic grilled cheese by adding some spicy buffalo chicken and building it all between two toasty slices of sourdough bread. We love how all these flavors come together and just know you will too.

  • Why we love it: It can be hard to constantly plan lunches for the week, so an easy, warm grilled cheese that we can add one of our favorite flavors to? It’s the perfect recipe for when we don’t know what else we make.

Ingredients

  • Bread – Sourdough really makes this sandwich shine. The slightly sour flavor that everyone knows and loves adds . Plus sourdough crisps super well, and soaks up the melty cheese and extra buffalo sauce.
  • Cheese – Our choice is American cheese for the best meltiness. Alternatively, cheddar also works really well as buffalo chicken and cheddar cheese are a perfect pairing.
  • Chicken – We recommend using leftover chicken simply for the ease. But if we’re making it fresh, we like to marinade it in a little vegetable oil, Frank’s hot sauce, salt, and cayenne pepper before grilling it.
  • Buffalo sauce – We truly believe that Frank’s can’t be beat when it comes to a classic hot sauce for buffalo chicken. But you’re free to use your favorite hot sauce or buffalo sauce. 

How To Make A Sourdough Buffalo Chicken Grilled Cheese

  1. Butter the bread – Generously butter one side of each piece of bread and place one, butter side down on your frying pan.
  2. Add the cheese – Add an even layer of cheese onto the bottom bread. You want to make sure each bite is equally cheesy.
  3. Add the chicken – Small bite sized pieces of chicken work best for this sandwich. It also makes it easy to achieve an even layer throughout.
  4. Drizzle with Frank’s – Our douse with Frank’s depending on how spicy you want it.
  5. Cook – Add the top piece of bread, butter side up and cook slowly over medium-low heat until golden brown and crispy. 
  6. Slice and serve – Cut it on a slight diagonal for a restaurant style presentation.

Expert Tips

  • Quality bread – Good bread makes for a good sandwich. We like to get fresh baked sourdough from the bakery section of our local grocer. This always makes for a tastier, more special feeling grilled cheese. 
  • Use leftovers – This recipe is meant to be simple, quick, and easy, so use leftover chicken if you have it. As long as it isn’t too saucy or flavorful, almost any leftover chicken will work because the buffalo sauce will cover up most other flavors. 
  • Or make the chicken fresh for prime flavor – However if you don’t have leftover chicken or just want to make this the best grilled cheese sandwich possible, then make chicken from scratch. We recommend a marinade of at least oil, hot sauce, and salt before grilling. You can also add in other seasonings like cayenne pepper, onion powder, and garlic powder. And if you wanna go even bigger, toss the chicken in hot sauce before putting it on the sandwich.
  • Add other fillings – Red onion and ranch are added ingredients we sometimes like to add to this grilled cheese. But don’t be shy with your flavor combinations!
  • Use buffalo chicken dip – If you have leftover buffalo chicken dip that you’re not sure how to use, make it into a grilled cheese! You can just serve it between two pieces of grilled sourdough for an incredible sandwich. Simply replace all the other fillings in this recipe with your buffalo chicken dip. Or added extra cheese if you’re feeling decadent!

Ingredients
 
 

  • 2 slices fresh sourdough bread
  • 2 teaspoons butter
  • 3 slices white american cheese
  • 2 ounces grilled chicken sliced or shredded
  • 2 teaspoons Frank's Red Hot

Instructions
 

  • Spread 1 teaspoon of butter on one side of a slice of sourdough bread, then place it butter side down onto a cast iron griddle.
  • Place an even layer of American cheese on top of the bread, then add a single layer of sliced chicken. Top with a generous drizzle of Frank's Red Hot, then the remaining slice of bread. Spread the remaining butter on the top piece of bread.
  • Cook over medium-low heat until bottom is crisped to a golden-brown color, about 4 minutes. Flip carefully, then cook until bottom is crisped, about another 4 minutes.
  • Transfer grilled cheese to a cutting board and slice in half. Serve immediately.

Notes

Sourdough bread: Use fresh sourdough from the bakery counter at your local market or grocery store for the best grilled cheese. The outside gets nice and crispy while the inside stays perfectly fluffy – which soaks up all the melty cheese and hot sauce!
Chicken: We love to make this sandwich for lunch when we have leftover grilled chicken in the fridge! You can put the cold chicken right on this sandwich, since it’ll warm up as you’re toasting the bread and melting the cheese.
Frank’s Red Hot: Frank’s tastes like buffalo sauce in a bottle to me – so it’s the perfect condiment for an easy, no-frills buffalo chicken grilled cheese. Douse this sandwich with as much or as little hot sauce as you’d like, depending on your spice tolerance!

    I never thought of making a grilled cheese with buffalo chicken. It came out so well! We had leftover buffalo chicken dip so I just added that on the bread with sliced cheese and it came out so good!!
