Like we said, we’ve been obsessed with this homemade sun-dried tomato pesto recipe lately. And we made the best summer sandwich with it, featuring layers of juicy grilled chicken, fresh mozzarella, and spinach on a fluffy baguette!

Sandwiches are one of our favorite lunches. It’s so easy to prep the ingredients at the beginning of the week and then take just 5 minutes a day to assemble before it’s time to eat! This saves us so much energy and time during the work week.

We also love a good picnic, and this sandwich is absolutely going on our short list of picnic recipes for this summer. I can’t wait to make this again and enjoy its fresh flavors while sitting by Lake Champlain.

What This Recipe Entails

If you have all the ingredients ready to go, it’ll only take a few minutes to assemble this sandwich! Use leftover or premade grilled chicken to have lunch ready in no time.

  • Prep time: 5 minutes

Ingredients

  • French baguette – This is our go-to bread for caprese-style sandwiches. We like to buy a standard baguette, then slice off 6-inch sections for sandwiches (we can usually get about 3 sandwiches out of one baguette).
  • Sun dried tomato pesto – We highly recommend making this from scratch (check out our 5-minute sun dried tomato pesto recipe), but there are some store-bought options out there as well. We haven’t tried any of them so we can’t give a good recommendation, but we always look for minimally processed options. Check the ingredients label to quickly figure out how natural it is!
  • Grilled chicken – Use premade grilled chicken or leftovers. Our go-to grilled chicken for sandwiches is this lemon grilled chicken, which uses a simple 3-ingredient marinade for easy flavor! It turns out perfectly juicy every time. 
  • Fresh mozzarella – If you can, we recommend buying pre-sliced fresh mozz! It makes this sandwich so easy to throw together. We like to buy the “thin sliced” variety, as we find this is the right thickness for sandwiches.
  • Baby spinach – We love fresh spinach on this sandwich, but you could easily swap it for any of your favorite greens. Arugula would taste great here as well!

How To Make A Sun-Dried Tomato Pesto Chicken Sandwich

  1. Slice the baguette lengthwise into two halves, then spread 1 to 2 tablespoons of sun dried tomato pesto on each half.
  2. Build the sandwich with grilled chicken first, then a layer of mozzarella cheese, then a handful of baby spinach.
  3. Close, optionally slice in half, and enjoy!

We love making these for an easy, satisfying lunch at home. But this is also the perfect sandwich to bring on the go, whether you’re planning a summer picnic, need a lunch for the beach, or bringing lunch to work.

To bring on the go: After assembling, wrap the sandwich in parchment paper or foil and pack it in a cooler with an ice pack. It’ll stay fresh for a few hours.

  • Prep ahead – We always love having sandwich ingredients prepped and ready to go in the fridge, so that when it’s time to make lunch it only takes a few minutes. We like to make grilled chicken with this zesty lemon marinade and sun dried tomato pesto at the beginning of the week, then use both for sandwiches day after day.
  • The art of sandwich making – The best sandwiches have carefully crafted layers; pay attention to the order in which you build your sandwich! We recommend spreading the pesto on both halves of the bread so that there’s plenty of moisture distributed throughout each bite. It’s also important to sandwich the mozzarella between the chicken and spinach, since fresh mozzarella can be a bit watery. This keeps it from soaking into the pesto or bread and making a mess.
