Red Chicken Enchiladas

Savory red chicken enchiladas are a go-to weeknight dinner for us. They’re easy to make with just 6 ingredients, endlessly customizable, and give us plenty of leftovers! Try serving them with avocado and Greek yogurt crema for a nutritious, comforting meal you’ll return to again and again.

Enchiladas are one of our favorite weeknight dinners, especially during busy weeks when we want leftovers for a few days. It’s such a versatile dish; we make enchiladas with pork, chicken, and even sweet potatoes, and like to change up the sauce based on what flavors we’re craving.

These saucy red chicken enchiladas might just be our favorite though! They’re classic, comforting, and satisfying thanks to plenty of protein (25 grams per enchilada!). Plus, they come together quickly with just 6 ingredients.

We like to make them with black beans and corn, but you can easily customize the filling to your liking with other veggies. See our Variations section below for ideas.

Key Ingredients

Ingredients for making red chicken enchiladas: shredded chicken, black beans, corn, shredded mexican cheese, flour tortillas, and red enchilada sauce.
  • Shredded chicken – We like to shred poached or boiled chicken breast for recipes like this one, but you can easily use whatever your go-to shredded chicken is, whether that’s a rotisserie chicken or instant pot chicken. Plainly seasoned chicken works best in this recipe for classic flavor.
  • Canned black beans – We love adding beans to Mexican recipes for extra flavor, fiber, and protein! We like to use canned black beans; simply drain and rinse before adding them to the filling.
  • Corn – You definitely don’t need fresh corn for this recipe. We like to keep a family-size bag of corn in our freezer and quickly defrost some in a colander under cold water at the same time as we’re rinsing the beans.
  • Red enchilada sauce – Homemade enchilada sauce tastes 1000 times better (and more authentic) than store-bought. We love to make Cookie and Kate’s recipe; the flavor is amazing, we usually already have the ingredients on hand, and it only takes 10 minutes. We highly recommend this if you can spare the extra few minutes and a saucepan!

How To Make Red Chicken Enchiladas

Step 1: Add the shredded chicken, black beans, corn, 1 cup of the cheese, and 2 tablespoons of the enchilada sauce to a large mixing bowl. Stir well to combine.

Step 2: Working with one tortilla at a time, assemble the enchiladas. Spread about 1 tablespoon of sauce over the tortilla, then add a few spoonfuls of the filling in a line down the center.

Step 3: Roll the enchiladas tightly and place them seam side down in a lightly greased baking dish (9×13 works great).

Step 4: Top the enchiladas generously with the remaining sauce and cheese.

Step 5: Cover the pan with foil and bake at 350F for 30 minutes, until the enchiladas are warm and gooey. Serve hot with your favorite toppings and sides, like avocado, Greek yogurt or sour cream, and chips and salsa.

Expert Tips

  • Shredded chicken – We always have frozen chicken in the freezer, so we use a pound of raw chicken, boiled and shredded, for this recipe which gives us about 10.5 ounces of cooked, shredded chicken. You can also use leftover shredded chicken, rotisserie chicken, or another alternative.
  • Grease the baking dish – You absolutely have to grease the baking dish, otherwise your enchiladas will stick! Make sure to get the bottom and sides so the enchiladas release easily without tearing.
  • Assembling enchiladas – It takes some practice knowing exactly how much filling to add to each enchilada. If you’re new to making enchiladas, we recommend assembling all 8 enchiladas on a large work surface so that you can easily redistribute the filling amongst them if needed.
  • Make ahead – You can easily make the filling ahead of time and keep it in the fridge until you’re ready to assemble and bake. Since the filling will be cold, we recommend baking the enchiladas for an extra 10 minutes or so (the same goes for simply using cold chicken that was made ahead of time in the filling). We don’t recommend assembling the whole tray of enchiladas ahead of time, as the unbaked tortillas can become soggy from the sauce.
  • Storing and reheating – Enchiladas keep well in the fridge for up to 5 days (less if you made the chicken or the filling a day or two in advance). We like to reheat single enchiladas in the microwave for about 1.5 to 2 minutes per enchilada. You can also reheat a larger tray of enchiladas in the oven at 350 for about 45 minutes to 1 hour (covered with foil).

Variations

You can easily customize these enchiladas to fit your tastes. Here are a few easy starting points:

  • Add more veggies – Try diced bell pepper, jalapeno, or poblano and/or diced red onion in the filling.
  • Swap the protein – Use pulled pork or carnitas instead of shredded chicken for an extra savory version.
  • Swap the sauce – Try our Mexican verde sauce for green enchiladas. Or, indulge with a gooey cheese sauce slathered on top!

Red Chicken Enchiladas FAQs

Homemade enchilada sauce is the best! It’s so much more flavorful than store-bought. We like to use Cookie and Kate’s recipe because it’s quick, easy, and tastes delicious.

Yes, chicken enchiladas freeze well. We recommend fully assembling a tray of enchiladas, then wrapping it (unbaked) in a layer of plastic wrap, followed by a layer of foil. This will keep up to 3 months in the freezer.

To cook a tray of unbaked enchiladas from the freezer, allow it to fully defrost in the fridge overnight. Then, bake according to the recipe, adding an extra 15 to 30 minutes of oven time because they’ll be cold. We like to use a digital thermometer to check the internal temperature of the enchiladas to see if they’re warmed all the way through (aim for about 160F).
