It might sound weird to put Korean gochujang chicken, lettuce, pepper jack cheese, carrots, cabbage, and sriracha aioli on an English muffin. But trust us, it’s delicious!

This recipe came about after we made our Korean slow cooker gochujang chicken and turned it into these Korean Mexican fusion tostadas. We had leftover chicken, slaw, and sriracha aioli. And we also happened to have English muffins, pepper jack cheese, and lettuce leftovers from making sandwiches earlier in the week.

Running low on groceries and not wanting to go to the store, we combined everything and made a Korean American mashup for lunch: a shredded gochujang chicken sandwich on an English muffin!

What This Recipe Entails

Our gochujang chicken sandwich is made with our Korean slow cooker gochujang chicken, a simple slaw, spicy mayo, lettuce, and cheese. While you’ll need to prepare the chicken in advance, the sandwich itself only takes a few minutes to put together.

Shredded Gochujang Chicken Sandwich Ingredients

Our gochujang chicken sandwich is a unique fusion recipe that takes some of our favorite Korean flavors and marries them with a typical American sandwich! Here’s what you’ll need to make this recipe:

We love the crunch of a lightly toasted English muffin with saucy shredded chicken for this sandwich. But feel free to try other types of sandwich bread, like a toasted brioche bun or Kaiser roll.

You’ll need to make our slow cooker gochujang chicken ahead of time for this sandwich. It’s a simple recipe that cooks in about 4 and a half hours in the crockpot, so you can set it in the morning and have the chicken ready for lunchtime. Or, start the chicken around midday to have it ready for dinner.

How To Make A Shredded Gochujang Chicken Sandwich

  1. First, toast an English muffin until it’s lightly golden brown.
  2. Next, make the slaw. Combine the shredded cabbage, carrots, lime juice, and salt in a small bowl. Toss gently until well combined and set aside.
  3. Then, reheat the slow cooker gochujang chicken in the microwave if needed, about 30 seconds to 1 minute per serving.
  4. Finally, assemble the sandwich. Spread sriracha aioli on the bottom English muffin, then add the gochujang chicken. Use a slotted spoon to transfer the chicken onto the sandwich so it doesn’t become too saucy (which will result in a soggy sandwich). Top with pepper jack cheese, lettuce, and slaw. Serve immediately.

You can easily throw this sandwich together for lunch if you’ve already prepared a batch of our slow cooker gochujang chicken. It only takes about 5 to 10 minutes, and it’s so delicious!

Slaw

  • ½ cup shredded red cabbage
  • ½ cup shredded carrots
  • ¼ medium lime juiced
  • 1 pinch salt

  • First, make the Korean slow cooker gochujang chicken ahead of time. This will take about 4 and a half hours.
  • Next, make the slaw. Combine the shredded cabbage, carrots, lime juice, and salt in a small bowl. Toss gently until well combined and set aside.
  • Toast an English muffin until it’s lightly golden brown.
  • Assemble the sandwich. Spread sriracha aioli on the bottom half of the English muffin (about one tablespoon per sandwich), then add the gochujang chicken. Use a slotted spoon to transfer the chicken onto the sandwich so it doesn’t become too saucy, which will result in a soggy sandwich. Top each sandwich with a slice of pepper jack cheese, lettuce, and slaw.

Korean gochujang chicken: This recipe is made with our Korean slow cooker gochujang chicken. While you’ll need to prepare it in advance, the sandwich itself only takes a few minutes to put together.
